A Quick History of New York Style Pizza

New York City skylineThe New York cuisine is a result of an amalgam of international recipes and influences, which, over time, have acquired a local specificity. Representative dishes here closely reflect the demographic history of the city, marked by waves of immigrants. Eastern Europeans and Central Europeans have introduced the bagel, a bread product boiled shortly before being baked, and the cheesecake, but the most famous recipe in New York cuisine is of Italian origin.

Gennaro Lombardi, an immigrant from Naples, opened a grocery store in Manhattan, in 1897. Eight years later, his store turned into the first pizzeria in the United States, and one of his employees, Antonio Totonno Pero, became the first chef who cooked pizza over the ocean. A whole portion used to cost five cents, but because many people could not afford to buy, Lombardi began selling slices of pizza, trying to meet his customers` budgets. Antonio Pero left the restaurant in 1924 and opened his own business, in Conney Island. Both pizzerias are still functional.

New Yorkers are very proud of their pizza and there is a long rivalry between New York and Chicago, as well as never-ending discussions to determine which city produces the best pizza.
